That special time of year is almost here. The time when we sit down with friends and family to be thankful for what we have and to dine on a delicious feast. There are so many great recipes out there, I posted a few incredibly easy delicious side dish recipes for you to try. Enjoy:
1. Roasted Asparagus with Bacon from The Cooking Channel
INGREDIENTS:
1 1/2 pounds trimmed asparagus
3 tbsp olive oil
3 cloves minced garlic
2 tbs rosemary
1 lb sliced bacon
kosher salt and pepper
DIRECTIONS:
Preheat oven to 400 degrees. Toss the asparagus with olive oil, garlic and rosemary and sprinkle with salt and pepper. Put the spears into groups of 3 or 4. Wrap a slice of bacon around each grouping spreading out bacon so you can see the spears. Cook on baking sheet until bacon is cooked about 25 minutes.

2. Cranberry Sauce Recipe from The Food Network
INGREDIENTS:
1 12 ounce bag of fresh or frozen cranberries
1 cup sugar
1 strip orange or lemon zest
salt and pepper
DIRECTIONS:
Empty the bag of cranberries to a pan and set aside 1 cup of cranberries.
Add 1 cup sugar, the zest and 2 tsp water to pan and cook over low heat.
Cook until the sugar dissolves and the cranberries soften, about 10 minutes.
Increase to medium heat and cook until the cranberries burst, about 10 minutes.
Reduce to low heat and stir in the cranberries you set aside.
Add sugar, salt, and pepper to taste and let cool before serving.

3. Chestnut and Pear Dressing from The Food network
INGREDIENTS:
1 large onion
1 large carrot
3 stalks celery
3 sticks unsalted butter
2 pears
1 cup chestnuts
8 ounce sausage
1/2 cup parsley
1/2 cup sage
8 ounces rustic country bread
2 cups turkey stock
salt and pepper
DIRECTIONS;
Preheat oven to 350 degrees. Cook onion, carrot and celery over medium heat in 2 tbsp of butter until soft about 10 minutes.
Combine pears, chestnuts, herbs, bread, and sausage in a bowl. Add the onion, carrot and celery mixture. Add some butter and stock to moisten the bread but not make it soggy.
Season with salt and pepper.
Spoon into a buttered shallow baking dish and cover with foil. Bake for 45 minutes, remove foil and bake for an additional 20 minutes more.

4. Three Cheese Mashed potatoes from Delish
INGREDIENTS:
5 pounds white potatoes cut and cubed
6 tbsp butter
1 8 ounce package of whipped cream cheese
2 cups white shredded cheddar cheese
1 cup parmesan cheese
8 ounce sour cream
1 tsp garlic salt
salt and pepper
milk for consistency
DIRECTIONS:
In a saucepan place potatoes and enough water to cover them. Cook 15 to 20 minutes until soft then drain and mash.
In a large bowl beat cream cheese, cheddar, and parmesan until smooth. Mix in sour cream, garlic salt, and salt and pepper.
Stir cheese mixture into the potatoes until well blended. If potatoes are too thick stir in one tbsp of milk at a time until desired consistency.
