A DELICIOUS CHRISTMAS TRADITION- FRUITCAKE

Hello all,

When I think of Christmas, I think of trees, decorating and baking. And when I think of Christmas baking, I think of fruitcake. Love them or hate them, fruitcake is definitely a Christmas tradition. I've tasted a few that were downright delicious. I've come across one that fits the bill for delicious. It's a recipe from a Taste of Home for a delicious Christmas tradition - fruitcake!. Give it a try!


INGREDIENTS:
3 cups coarsely cut nuts such as walnuts, pecans or hazelnuts
1 pound chopped pitted dates
1 cup halved maraschino cherries
3/4 cup flour
3/4 cup sugar
1/2 tsp baking powder
1/2 tsp salt
3 eggs
1 tsp vanilla extract



DIRECTIONS:
In a bowl combine, nuts, cherries and dates. In a separate bowl combine flour, sugar, baking soda, and salt. Add to nut mixture and stir until well coated.
In a small bowl beat eggs until foamy then stir in vanilla. Fold into nut mixture and mix well.
Pour into a greased parchment lined 9 X 5 loaf pan.
Bake at 300 degrees for 1 3/4 hours until toothpick inserted into the center comes out clean.
Cool and enjoy!
